Corn, Tomato, & Avocado Salad
This Corn, Tomato, & Avocado Salad is summer in a bowl! The perfect side dish with anything you’re grilling, or double the portion as a main dish.
Yield: 4 servings, Serving Size: 1 cup
INGREDIENTS
Corn kernels from 1 large steamed corn on the cobb (1 cup)
5 ounces diced avocado, from 1 medium
1 1/2 cup diced Persian cucumbers (about 3 small)
1 cup halved cherry tomatoes
2 tablespoons diced red onion
2 teaspoons extra virgin olive oil
2 tablespoon fresh lemon juice (from 1 medium lemon)
1/4 teaspoon kosher salt
fresh black pepper, to taste
PREPARATION
- Toss all ingredients together and serve immediately. Enjoy!

Chopped salad with romaine lettuce, Feta cheese, cucumbers, red onion and dill tossed with a simple red wine vinaigrette. A light meal or an easy side salad to go with all your Mediterranean dishes.

INGREDIENTS
8 cups chopped romaine lettuce
1/2 English cucumber, peeled and diced in large chunks
1/3 cup Feta cheese, crumbled
1/8 small red onion, sliced lengthwise
1/4 cup olive oil
2 tablespoon red wine vinegar
1 1/2 tablespoons fresh chopped dill
1/2 teaspoon kosher salt
fresh black pepper, to taste
PREPARATION
- Toss all the ingredients together and serve right away.
